VINIFICATION
As a rosé with a short cold maceration and gentle pressing, yielding 45%. Fermentation at 18°C in stainless steel. Bottling takes place in the following May after the harvest by assembling the best base wines. Bottle aging on the lees for at least 24 months.
NOTES
Natural rosé from maceration, aromas of wild strawberries and cherries reminiscent of the original grape, good structure and acidity.
PAIRINGS
Pairs well with pasta dishes and grilled fish, excellent with seafood and fish carpaccio.
